My 3 favorites are:

Sociable: Automatically add links on your posts, pages and RSS feed to your favorite social bookmarking sites. http://blogplay.com/plugin {I love thsi because it allows readers to easily share the post via social media which generates more readers}

WordPress Mobile Edition: Show your mobile visitors a site presentation designed just for them. Rich experience for iPhone, Android, etc. and clean simple formatting for less capable mobile browsers. Cache-friendly with a Carrington-based theme, and progressive enhancement for advanced mobile browsers. http://crowdfavorite.com/wordpress/ {I personally hate trying to read a blog from my phone and having to scroll all over, this plug-in makes your blog easily readable on mobile devices}

Disqus Comment System: The Disqus comment system replaces your WordPress comment system with your comments hosted and powered by Disqus. Head over to the Comments admin page to set up your DISQUS Comment System. http://disqus.com/ {Many people won't log in to your individual blog to comment but the DISQUS plug-in allows them touse their existing account to post & track their comments, with this plug-in you have fewer annonymous comments}
Akismet is an awesome spam comment blocker. You have to set up an API key, but it is very easy. When you get spammy comments, they will go into the spam folder. http://akismet.com/

Find Me On is a cool little widget for your sidebar that you can add little buttons for all of your social network profiles like twitter, facebook, youtube, linkedin, & even your BBB profile on Ning. http://jeremyanticouni.com/wordpress-plugins/find-me-on/

Page Links To is a tool that allows you to have pages and post titles link to other pages on your site or outside of your site. For instance, Happy and Healthy Mom has a Ning site. On my website, I have a Community Tab. When people click on it, they are directed to the Ning site. http://txfx.net/code/wordpress/page-links-to/

Add To Any is a nice sharing widget that lets people share your posts and pages across over 100 different networks.

Subscribe To Any allows people to subscribe to your rss feed either through a reader or via e-mail.

Those are just some of the many awesome plug-ins I use.
How easy are these to install? I'm so afraid of making changes/mistakes. The girl that did my website was very good and cost effective, but if I have to call her everytime I screw up I'll never make any money!
They are actually very easy to install. If you join the Become Better Brands Bootcamp program, I actually will be doing some workshops on widgets, apps, plugins, and tools you can use and I will show you how to install and set this up yourself. The whole 10 week program is only $197 if you sign-up by 7/15. This will help you avoid having to pay someone else to help you. http://bbbbootcamp.happyandhealthymom.com I also offer one on one assistance if the full program isn't right for you.

They are rather easy to install, it is really just a button you click for most.

What a great thread! My site is in wordpress but I dont know alot about using the plug ins so this is very helpful.
Thanks Ladies
There are so many diffeent plugins out there, that this thread could go on forever. It is up to you to recide what you want for your site. You'd be amazed at the capabilities. A word to the wise though, make sure that the site providing the plug in is updated regularly and has a good rating. Plug-ins can be security loopholes on a wordpress site, so you have to make sure that the developer is legit.
